Welcome everyone, It is my joy to introduce you to Delicious International Cuisine: Applying Vedic Principles Of Healthy Living To Enhance Recipes From around the world. This is a commonsense beginners guide to nutritious spontaneous Ayurvedic Cooking. This cookbook is simple but fundamentally basic to any cooking and dietary tradition.


My interest and orientation with vegetarian cooking came as a volunteer for a non-profit consciousness based educational organization cooking for meditation courses and groups starting back in 1979. Even then vegetarian cooking was something no one had much experience with. Ayurveda came later in the mid-80s.


This cookbook is a culmination of my experience and my interest in the principles of Ayurveda and the development of consciousness. The qualities of intelligence or consciousness for cooking and nourishment can be simply understood in terms of three basic Sanskrit terminologies: Sattvic, Rajasic, and Tamasic, meaning nourishing, stimulating and dulling respectively.


There are two basic sections in this cookbook. The first half is dedicated to the Cuisine of India from where the Vedic tradition of Ayurveda the science of long life has been traditionally used for balanced diet and nutrition. The second half I focus on International cuisine, our favorite cooking traditions from around the world with a smorgasbord of side dished, desserts, Soups, Salads, dressings, condiments, dinner and breakfast recipes.

Without proper diet medicine is of no use. With proper diet medicine is of no need. That is why it is good to know the Ayurvedic principles of healthy living and diet so we can enjoy better health in life. For that we need to learn how to live in accord with natural law. Ill health is the result of continued violation of natural law over time. In Ayurveda you learn about general rules for maintaining good health and specific rules that pertain to the unique nature of an individual. Modern education teach you about man made laws and specific laws of nature but does not teach you how to live in accordance with all the law of nature. There is an ancient tradition and science of health call Maharishi Ayurveda that incorporates the science of consciousness, for life span and longevity that teaches you how to live in accord with all the laws of nature in a balance way.


In Ayurveda there are general dietary rules as well as specific, the general rules are:

  1. Daily practice of Transcendental Meditation before breakfast and dinner, morning and evening.

  2. Eat fresh foods and freshly prepared,

  3. Eat whole foods not refined foods,

  4. Eat not too little or too much,

  5. Eat the main meal mid-day.

  6. Eat food that is low on the food chain,

These general rules followed will prevent 50% of all diseases and general health problems. It is these basic rules that these recipes have been created from my own experiences of cooking.


The specific rules help you know what to do based on your personal unique makeup. Those different categories of seasons, time of day, physiological types determines what can be causing an imbalance on the level of different influence we experience in life. It can be the simples of things that pertain to your diet and the three doshas: Vata, Pitta and Kapha with respect to daily and seasonal influences that effect the unique nature of the individual. From those rules you will learn how to choose and cook each recipe based on your personal needs and tendencies. Those specific guidelines you can learn about in the section, Balancing daily & seasonal influences.

Food has a great influence on the mind because everything we eat and drink is transported by the blood which sustains the nervous system. Therefore, the quality of food has a great deal to do with the quality of the mind. Likewise, the quality of food is influenced by how we earn it, the person who is cooking it, how we feel when we are eating it. Nourishment include raising our consciousness, creating greater balance and orderliness in our daily lives through the practice of Transcendental Meditation and being involved with all areas of Consciousness based programs and technologies.
